> Ham with Orange Sauce
Serves 6-10
Preheat oven 325ºF/170ºC/Gas 3
1 Giant TERINEX LOOK OVEN BAG 45cmx55cm (17½ x 21½ inches)
Ingredients
325ml (12 fl oz) orange juice
35ml (3fl oz) Dijon Mustard
80g (2½ oz) dark brown sugar
1x170g (6oz) dried ready to eat apricots - quartered
1x1kg-2kg (2¼x4½) fully cooked ham
whole cloves of garlic
approx. 1 tsp arrowroot
Method
- Glaze - put the orange juice, mustard, brown sugar and apricots into a glass dish. Mix well.
- Using a sharp knife, score the ham with a diamond pattern. Insert cloves into the diamond shape.
- Snip off the corner of the TERINEX LOOK OVEN BAG then place the bag into a roasting tin large enough to take it without folding too much then pour some glaze into the bottom of the bag. Place the ham into the bag and pour the rest of the glaze over the ham. Tie bag. Put into the oven and bake for 1¼ - 2 hours or until a meat thermometer inserted into the meat reads 140º.
- To serve - cut open the bag and allow the steam to escape. Transfer the ham to a serving platter and allow to rest for 10 mins while thickening the sauce. Put sauce into a pan on the heat. Mix arrowroot with a little water and thicken sauce to own taste. Pour some thickened sauce over the ham before slicing thinly. Serve with fresh seasonal vegetables.
