> Swordfish Mediterranean Medley
Serves 4
Preheat oven 180ºC/350ºF/Gas 4
1 Medium LOOK OVEN BAG (25x38cm) or 1 Large (35x43cm)
Ingredients
4 Swordfish steaks, approx. 140g-170g (506oz)
1 Red pepper, deseeded and roughly chopped
1 green pepper, deseeded and roughly chopped
2 cloves of garlic, finely chopped
1 small onion, finely diced
Juice of half a lemon
2 tsp cornflour
Salt and pepper
1tbls olive oil, salt and freshly ground pepper, fresh sprig of dill and lemon slices for garnish
Method
- Snip off the corner of the TERINEX LOOK OVEN BAG and dust with the cornflour and place into a roasting tin large enough to take the bag. Brush the fish with the oil.
- Mix the chopped vegetables and pile onto the fish steaks. Sprinkle with lemon juice and season with black pepper.
- Using a fish slice or spatula carefully put the fish into the bag. Tie the bag and put into oven for approximately 15-20 mins or until fish feels firm to the touch. Do not overcook
- Snip open the bag carefully to allow the steam to escape. Leave for 1 minute then place on serving plates and garnish with lemon slices and sprig of dill.
- This is nice with mashed potatoes and peas
