> Swordfish Mediterranean Medley

Serves 4

Preheat oven 180ºC/350ºF/Gas 4

1 Medium LOOK OVEN BAG (25x38cm) or 1 Large (35x43cm)

Ingredients

4 Swordfish steaks, approx. 140g-170g (506oz)
1 Red pepper, deseeded and roughly chopped
1 green pepper, deseeded and roughly chopped
2 cloves of garlic, finely chopped
1 small onion, finely diced
Juice of half a lemon
2 tsp cornflour
Salt and pepper
1tbls olive oil, salt and freshly ground pepper, fresh sprig of dill and lemon slices for garnish

Method

  1. Snip off the corner of the TERINEX LOOK OVEN BAG and dust with the cornflour and place into a roasting tin large enough to take the bag. Brush the fish with the oil.
  2. Mix the chopped vegetables and pile onto the fish steaks. Sprinkle with lemon juice and season with black pepper.
  3. Using a fish slice or spatula carefully put the fish into the bag. Tie the bag and put into oven for approximately 15-20 mins or until fish feels firm to the touch. Do not overcook
  4. Snip open the bag carefully to allow the steam to escape. Leave for 1 minute then place on serving plates and garnish with lemon slices and sprig of dill.
  5. This is nice with mashed potatoes and peas
